Homemade Korean Soba Noodle + Soy Milk for Hot Days

Pictured in this post are a recent dining experience I had with V. This bowl of tantalizing cold ‘콩국수’, a delightful Korean soy milk noodle dish, really well complemented the hot weather that day. The concept of chilled noodle with ice in soy milk may sound very foreign, and it is!, but it is actually really delicious. The dish is adorned with crisp cucumber slices and boiled egg for added visuals and taste. But the real the magic here is the soymilk-broth???, which was made by V’s mother. I would highly recommend trying this dish at a Korean restaurant nearby or look for a recipe online somewhere and try it!
