Last night, I knew V and I were eating at home, but she surprised me with a dish I did not think of. Recently, we set a goal to cut down on eating out and embrace healthier homemade meals but I didn’t know that I would be rewarded for eating at home with this unexpected menu. To my surprise, she brought out of thinly sliced pork belly, also known as “대패 삽겹살” as I was getting ready to prepare the salad. Now, pork belly isn’t typically associated with health, but we tried our best to balance things out. By incorporating a generous portion of salad, we aimed to enhance the harmonious blend of flavors and nutrients while keeping the guilt factor in check.
Unlike regular pork belly, there was no excessive dripping of fat, and the meat itself tasted leaner. It was a delightful combination of tender pork, fresh salad, and V’s special pineapple sauce that truly elevated the experience.
Speaking of V’s sauce, it really made a huge difference in the overall experience. Made with a mix of pineapple, garlic, and pepper, this sauce hits the perfect balance between spiciness and sweetness. I will share the recipe here once I have all the precise ingredients and ratios figured out!
